“Enjoy Life” w/ todays 25 Days of Gluten-Free Giveaways™ featured company!

I have had so much fun doing recipe development using Enjoy Life Foods delicious gluten-free and top 8 allergen-free products! I was so impressed with all that this company offers that are all top 8 allergen-free. From chocolate, cookies and bars to chips and trail mixes they have it all. I am officially addicted to their sugar crisp cookies and can eat a whole box in one sitting (wait, maybe I shouldn’t announce that publicly ;) ).

I began my recipe development with these easy s’mores bars that can be prepared and cooked in less than 20 minutes. My non-GF hubby and kids LOVED them as did I. My husband in particular couldn’t stop raving about how great they tasted. I personally love that in a last minute bind you can throw these bars together and have a fantastic dessert to share that nobody even needs to know are gluten-free.
DSC_0257Easy S’mores Bars

  • 1 box Enjoy Life vanilla honey graham cookies
  • 4 T butter or dairy-free butter substitute
  • 1 1/2 C mini marshmallows
  • 1 C Enjoy Life mega chunks chocolate
  • gluten-free non-stick cooking spray

Preheat the oven to 350 degrees. In a large ziplock bag, crush the entire box of cookies until there are no large chunks left. Meanwhile, melt the butter. Combine the cookies and butter then press into a greased 8×8 pan. Sprinkle the cookie crust with 3/4 C chocolate and 1 C marshmallows. Bake for 10-12 minutes. Immediately top the bars with the remaining 1/2 C mini marshmallows and 1/4 C chocolate.

DSC_0179Can you tell that I love making quick and easy desserts that require little to no cooking? These raspberry sugar crisp pudding cups are fresh and delicious. They can be put together in 20 minutes but don’t count on them lasting that long. They will be gobbled right up!

Raspberry Sugar Crisp Pudding Cups

  • 1/2 box of Enjoy Life sugar crisps
  • 5 T butter
  • 3 C milk
  • 1 C sugar
  • 3 egg yolks
  • 1/4 C corn starch
  • 1/2 tsp. gluten-free vanilla
  • 1 C fresh raspberries

Melt 3 T butter in a pot. Whisk in 2 1/2 C milk, sugar, vanilla and egg yolks. Cook over medium heat, whisking often, until hot but not boiling. In a bowl combine 1/2 C milk with the cornstarch. Slowly whisk in the cornstarch and continue whisking the mixture until it thickens and begins to boil. Once it has thickened, remove from the heat. In a large ziplock bag, crush the cookies until no large chunks remain. Melt 2 T butter and mix with the crushed cookies. Separate cookie mixture evenly into two large custard cups. Top with fresh raspberries and top with homemade pudding. Enjoy!

DSC_0248Lastly, I knew I had to make something savory using the Enjoy Life Plentils. I happened to have a bunch of leftover turkey from Thanksgiving so I decided to make a creamy turkey tetrazzini. It can easily be made with chicken if you don’t have shredded turkey on hand. My family loved this dinner and I liked that it was easy to make. I also enjoyed the nice textural difference of the creamy casserole with the crunchy Plentils topping.

Turkey Tetrazzini

  • 1 (16 oz.) package of uncooked gluten-free spaghetti
  • 1/2 C butter
  • 1/2 C gluten-free all-purpose flour
  • 2 1/2 C turkey broth
  • 2 C milk
  • 1 1/2 C cheddar cheese
  • 3 C shredded turkey
  • 1 C peas
  • 1 bag Enjoy Life garlic parmesan Plentils

Preheat the oven to 350 degrees. In a large stockpot, cook the pasta according to package directions then drain. Meanwhile, in another pot melt the butter. Stir in the gluten-free flour to make a roux. Whisk in the turkey broth and milk. Cook until hot. Stir in cheddar cheese and whisk. Fold in the turkey, peas and pasta to the cheese sauce. Pour into a 9×13 pan and spread out evenly. Crush the chips in the bag making sure to open a small corner first so that you don’t pop the bag. Sprinkle over the noodle mixture and bake for 45 minutes.
